Shrimp and Tomatoes

Ingredients:
1 1/2 lbs Medium Shrimp (peeled, deveined, and tails removed)
1 T plus 2 tsp Olive Oil
6 Plum Tomatoes (cored, halved length, and sliced 1/2 incn thick
3 garlic cloves (thinly sliced)
2 T chopped fresh parsley
2 T fresh lemon juice
1/8 t red-pepper flakes
Black Pepper
coarse salt


    Preparation:
  1. In a large nonstkc skillet, heat 1 T oil over high heat
  2. Season shrimp with salt and ground pepper
  3. Add half the shrimp to the pan; cook until opaque throughout,3 to 4 minutes
  4. Transfer to a plate; repeat with remaining 2 T oil and shrimp
  5. Reduce heat to medium; add garlic and red-pepper flakes. Stir in tomatoes; cook until they begin to break down, 4 to 6 minutes. Season with salt
  6. Return shrimp and any accumulated juices to pan. Add parsley and lemon juice; toss to coat. Serve over pasta, rice or spinach, if desired.
